
Yes, this is hand-made gnocchi, and yes that is fresh tomato sauce, and on top of that even fresher buffalo mozzarella. And yes, they probably picked those giant fresh basil leaves just as the waiter whisked the hot dish out the door. But this is how they do it in Italy.
I took this snapshot to always remember this perfect dish in Florence last fall, when I lived out my own, shorter version of Eat Pray Love. I did not make it all the way to India and Bali, but I did quit my job and go to Italy. I ate and prayed, and managed to go to mass all but one day that I was there; twice at St. Peters! I could not think of a more wonderful place to ground yourself.
